Grilled Cajun Chicken Wings

I think I have mentioned this before, possibly multiple times, but I LOVE to grill out. I always use charcoal, it gives whatever you grill such a fantastic flavor.

My parents always grilled out in the summer too (they still do.) One of my favorite things that they grilled when I was growing up was Cajun Chicken Wings. 

The seasoning they used was made by McCormick, which they don't make anymore- it was called "Creole" seasoning. I wish they still made it. I'm sure that I would find that it tastes like any other cajun/creole seasoning you can buy in the store but my memory tells me otherwise.

I remember when I was 12 or 13 coming home from school and wanting wings. My parents were still at work so I just pulled some wings out of the freezer, threw them on a baking sheet and covered them in cajun seasoning and stuck them in the oven and hoped for the best. They actually turned out good! Hows that for an afternoon snack!? Other kids were playing sports and eating lunchables and what not and I was just whipping up some chicken wings.

Any who, there's nothing fancy about how I make these wings. Load them up with whatever cajun seasoning you have on hand, or make your own. 

It would be really fantastic if I could figure out how to separate the wing parts but at the time of this blog post, it still frustrates the ever living sh*t out of me that I can't do it. I blame it on my knives.

But I guess the best part is, you can still grill these guys attached together. They just take a little longer to cook through- but I leave my wings on the grill for an extra long time because I like them CRISPY!

Sweet Tea Cake with Whipped Lemon Frosting

Here in the south, sweet tea is pretty much a staple. We chug it like it's water and I'm okay with that. 

This recipe just screams summer to me, and surprisingly its not too heavy so you will still feel good wearing that bikini! Just don't eat too much ;) 

This recipe calls for REALLY strongly brewed tea, so don't use any kind of bottled tea that you would drink. You  need it to be really strong for the tea flavor to come through. Steep it as long as you can bear for this recipe.

I hope you all are enjoying your summer as much as I am.. but GOD it's hot out there. Cool off with a slice of this cake and a tall glass of sweet tea.

Mini Hot Dog Sliders

Do you like to serve and eat adorable things? If so, I have something right up your alley! 

Not only are these little guys cute as can be, they're yummy too! And you can load them up however you and your family like. We used brown mustard, ketchup, and even BBQ sauce on some of them. 

Another plus? Perfect size for little kid hands!

I can see these being served at birthday parties, prepared in advance and thrown in an aluminum pan for tailgating, or for a taste of summer on a rainy day (like we did). 

With just a couple of ingredients, pick them up at the store this weekend and be prepared to hear your family squeal in delight!

Buffalo Chicken Dip Bites

Have you guys ever tried that yummy buffalo chicken dip at parties? Usually with tortilla chips or celery- its so good!

Technically I set out to make a "buffalo chicken croquette" but once I bit into these little guys, I had to change the name! They taste exactly like little bite sized morsels of that favorite dip, but no dipping is required!

A quick tip to shredding your chicken is to throw it into your Kitchenaid mixer with the paddle attachment and whisk it around a couple of times. Just be careful when you're mixing in the other ingredients that you don't whip it too much, or it kinda becomes gooey and the chicken gets lost.
