Steamed Clams with White Wine, Butter, and Garlic

Following up with my last seafood post, this is something I make frequently for my boyfriend. He love love loves it. I pry away some of the clam meat from him to make clam chowder for him too, and I pour the extra wine sauce that remains into the chowder.

Apparently the clams and the chowder are pretty damn good. Make the clams now, I will post the chowder recipe soon!


50 little neck clams, scrubbed and rinsed well
2 T extra virgin olive oil
6 cloves minced garlic
1 c white wine
2 T butter
1/2 c fresh chopped parsley (I pretty much never have this on hand so I don't use it)


1. Wash clams well to remove any dirt or sand.
2. Heat olive oil in large pot over medium heat. Sautee garlic until fragrant, about 1 minute.
3. Add white wine, reduce by half.
4. Add clams, cover, and steam until clams start to open. Add butter and cover until all the clams are open. Discard any that will not open. Transfer clams and juice to two large bowls, serve with butter and limes.

Easy Crab Leg Boil with Old Bay

So those of you that know me well, know that I do not eat seafood. At all. I think when I was little my mom could get me to eat those frozen fish patties if she put a slice of american cheese on it (typical) but other than that I just really have never liked it. 

Believe me, I've tried. We live in a beautiful coastal town where beautiful fresh seafood is bountiful, and I can't even partake. 

I don't mind making it though. This works out well for my boyfriend who L.O.V.E.S. anything from the sea...especially clams and crab legs!!

This crab leg recipe is ridiculously simple and probably shouldn't even be considered a recipe, per say. Obviously we don't have fresh snow crabs just walking around on the beach here in North Carolina so I bought these legs at the grocery store, already cooked. But from what I hear- it doesn't make them any less delicious then the crab legs you can pay an arm and a leg (ha) for at a restaurant! Guys, you could even make these for a quick special weeknight dinner. Just saying.

Side note: I even had a bite of the claw...and didn't hate it. Go figure.


2 lb frozen snow crab legs (I suppose this could work for king crab too.. but I've never tried it)
3 T Old Bay Seasoning
1 T garlic powder
3-4 bay leaves
10-15 whole black peppercorns
water to fill the pot


1. Fill a big pot with enough water to cover the crab legs. Bring to a boil and add salt to taste.
2. Add seasoning and boil a few minutes to let the flavors combine.
3. Add the crab legs. Let simmer in pot for about 8 minutes.
4. Remove from water and drain. Serve hot with butter and lemon wedges.

Funfetti Pancake Muffins

These couldn't be easier for weekday mornings. It's like a pancake in a muffin cup! Grab and go! Feel free to add additional mix ins like blueberries, chocolate chips, strawberries, or even sausage.


2 c complete pancake mix (I used Funfetti)
2/3 c milk
2 eggs
1/2 c maple syrup
optional mix ins


1. Preheat oven to 350*. Mix all ingredients but mix ins.
2. Fill muffin tin with liners or spray with nonstick cooking spray. 
3. Fill each cup 2/3 way full.
4. After they are full, sprinkle your mix ins on top if you are using. (I didn't use any this time)
5. Bake 15 mins or until a toothpick comes out clean.

Cheesy Sausage Quiche

On Fridays at work we all indulge ourselves and order breakfast delivery. The past couple of weeks I have been ordering a slice of their quiche and it is just heavenly. But at 6.99 a slice it certainly is not wallet friendly! I can make a whole pie for less than that at home- so why not try?

Feel free to add whatever veggies/meats you like to your quiche. They are great for breakfast or brunch but you can also have quiche for a quick easy dinner with a side salad!


9 inch frozen pie shell (I used deep dish)
1/2 lb breakfast sausage
1/2 c onion, diced
2 T flour
1 1/2 cups shredded cheddar cheese
2/3 c milk
2 eggs
salt and pepper to taste

1. Preheat oven to 375*.
2. Prebake shell for 5-10 mins.
3. Meanwhile, brown sausage and onions. Drain. Add 2 t flour and stir around until flour is cooked. Remove from heat.
4. Beat 2 eggs with milk, add salt and pepper to taste. Remember that the sausage and cheese have a lot of salt in them already.
5. Place sausage in bottom of pie shell. Top with cheese. Pour egg mixture over. Place in oven and bake 30-40 mins until firm. If you did not use a deep dish pie crust, put a baking sheet under incase it overflows.
6. Remove from oven and let cool. Can be served warm or at room temperature.

Goes well with a mimosa!
